Nina's Healthy Kitchen is a free website where you can find a large variety of recipes that are easy to prepare and made with whole foods. You will find new recipes posted regularly including smoothies, pasta dishes, desserts, salads, juicing ideas, vegan lasagna, pizza crusts from ancient grains, rice, vegetables, breads, and soups, just to mention a few. The site includes videos to aid in the preparation of various dishes.

It`s important for the body to get amazing fuel in ways through what we eat and drink. And I`m honoring you for stepping into your power and choosing to eat in a healthy manner and to nourish your body in the best way possible! Amazing.

Taking it a step further - have you ever also realized the bridge between our thoughts, feelings, uncovered emotions and our health? And also the other way around - how some food tend to give us everything from comfort to pain and dis-ease?

On this site we will uncover some of the importance between food and our well-being.

I believe every soul on earth has a right to nurture their body with good fuel; real ingredients, good nutrients and positive vibes. I truly believe our eating habits are vital to live a fulfilling life.

For years, I have served as a useful source to those seeking inspiration, help, or advice. I have finally decided to own that role and be intentional about it.

Obviously I have a soul-deep passion for food and lifestyle, and a vision of reaching and helping as many people as possible. I've done a lot of intuitive cooking; using ingredients I have in my pantry and combining the different flavors and textures into something new. Besides being fun, I've collected a lot of wows along the way. My experiences have led me to my passion, Nina's Healthy Kitchen.

This is my vision: To contribute making the world healthier. Inspire and encourage healthy, easy, tasty and fun cooking. To empower that everyone truly deserve healthy food. Being a trusted voice for healthy cooking, creating a Global change.

Juice in a jar

Need a fast vitamin boost while heading out? Grab your greens, and get it juicy!

The sun is out and I got my greens at arms reach.

Just juice it up, gab your jar, and head out. Taste like sunshine in a jar, with a kick of detox. I'll say just about perfect!

Are you heading out to play? This is sure to boost you up for just about any activity, it's packed with amazing nutrients. And if it's warm where you are, well this is a good source of hydration in combination with water. Be safe, stay healthy, and juice your greens.

Fresh spring rolls - magic from the East

I love a good spring roll, and these are wrapped with paper-thin rice paper, making them super soft. As the traditional with filo paper in stores is made with wheat, I prefer the rice paper. The consistency will however be very different with this two wrappings. By using filo paper I would therefore suggest try making the dough from scratch.

These I made with:

Ground meat from sheep (can also make them vegetarian and switch the meat with shiitake mushrooms), onion, carrots, garlic, white cabbage, ginger, coriander, rice noodles.

Fry the meat, add salt, pepper and ground coriander. Cleanse, chop and add all the veggies in a food processor. Boil the rice noodles in saltwater. Then just mix everything, and add also some fresh coriander. When using the rice paper I have boiled water in a large enough dish with tall enough edges. I soak it for some seconds, place it on a clean kitchen towel, add some of the filling and wrap it.

It can either be eaten fresh like this, or you can add some olive oil and bake them for 10-20 min in the oven. It's also possible to fry them in oil, but because of health aspects it's not the best option. It's actually really fast to make, and the kids love them. Of course they can be filled with whatever you prefer, but this one is one of my favorite ones.
